10-MINUTE AHI POKE TACOS

As much as I love to cook for my family every night, sometimes there's just not enough time to make a full on meal from scratch. And to be honest, most of the time by 4:00pm exhaustion from the day has set in and we are way too tired to go out to eat!  I know, I know I've officially turned into a nana (also known as a parent to a toddler).

Zucchini Lasagna

For those questioning, I am a MAJOR pasta fan so by no means does this
mean I have cut carbs out. I'd rather sell my right arm then give up bread.
For real.

Ok back to the post. This recipe came about from literally having nothing in the house but
turkey meat, zucchini, and sauce. Truth be told I could live on cheese and bread so I always have various cheeses on hand. I wasn't in the mood for meatloaf, meatballs, or anything of the sort, so I figured why the hell not! Now if you are OCD like me and don't own a mandolin the non-perfect slices of zucchini might drive you mad but I powered thru it! I tried my damnedest to perfect my knife skills and getting my Bobby Flay on.

Whole Wheat Chocolate Chip Banana Bread

Ever since I was a kid Banana Bread has been one of my favorite sweet treats to eat. My grandma always used to make it for us when we would go over to her house and it will forever remind me of her! That being said, I have grown up loving to bake it and keep it in the house.

I don't know about you guys but we buy bananas and they always seem to ripen so fast to the point where no one will eat them! Of course I can't let them go to waste, so we have endless amounts of banana bread at all times. This family recipe is SO easy and I changed it up a bit by using whole wheat flour and adding dark chocolate chips.

Ingredients
4 Ripe Bananas
1/2 C Sugar
1/3 C Melted Butter
1 tsp Vanilla
1 tsp Baking Soda
1 Egg
Pinch of Salt
1 1/2 C Whole Wheat Flour
Dark Chocolate Chips

Preheat your oven to 350. Mash bananas in a bowl until they are broken down completely. Add melted butter and mix. Next, add beaten egg, sugar and vanilla and mix together. Side note: If you prefer your banana bread on the sweet side you can add more sugar. Since I use 4 ripe bananas they add the perfect amount of sweetness and don't require as much sugar.

Next, add baking soda and pinch of salt. Now add your flour gradually and mix. Once all the ingredients are incorporated, add as many chocolate chips as you like leaving some to sprinkle on top.

I use these loaf pans and they are brilliant! No greasing or clean up. Bake for 40 minutes or until toothpick comes out clean. Enjoy!

Roasted Purple Cauliflower

Have you ever eaten something so delicious that you can't get it out of your head?
I know, duh. Who hasn't?! Well, I ate the most delicious roasted cauliflower at the
Venice eatery Gjelina, and I decided to try and duplicate it after I found this amazing
purple cauliflower!

What you need
1 head of cauliflower cut into florets
red wine vinegar
olive oil
salt
red pepper chili flakes
handful of flat leaf parsley
2-3 garlic cloves sliced

Preheat oven to 400. Drizzle florets with olive oil, salt and garlic and mix
together. place on baking sheet. Cook for about 40 minutes or until cauliflower
is browned and tender. Remove from oven and drizzle a tad more olive oil, red
wine vinegar, chili flakes (add as much or as little as you like) and salt. Sprinkle
with parsley right before serving.

Enjoy!
